You can buy caviar from other fish than sturgeon: lumpfish, capelin, keta (dog salmon), pink salmon, red salmon, king salmon, coho salmon and trout (and it’s quite popular). I have even seen one harvested from flying fish! The price range is really wide. But let’s assume that black sturgeon caviar become cheaper. I don’t think it would make caviar more popular in general but probably people who enjoy eating cheaper versions would afford to switch to a better roe, for example black https://globalseafoods.com/collections/black-caviar
